Imagine strolling through a lively neighbourhood and stumbling upon a charming classic French restaurant with impeccable vibes, fantastic food, a robust wine selection and phenomenal but laid-back service. This was the reality for many, thanks to Restaurant Chantecler, a beloved establishment that has been operating since 2011. However, a fire in 2020 tragically destroyed the space. In the face of this challenge, the owner, Jacob Wharton-Shukster, sought our expertise to recreate the same quintessential ambiance of Restaurant Chantecler in a new location. This task presented a unique and complex set of challenges we were eager to tackle, resulting in a new location offering a unique and authentic experience.
The new location already had all the elements of a well-built environment, such as pristine drywall, polished concrete floors, HVAC, sprinklers, and life safety systems. What usually would be considered an asset when looking for commercial real estate posed a unique challenge. How can we make it feel like the restaurant has been there for a long time while keeping it as authentic as possible? We had to embody a certain je ne sais quoi that usually only exists in spaces with layers of history. At Chantecler, using rustic elements is not just a design choice but a deliberate strategy to evoke a sense of connection with an implied past. To create vibrant vignettes, we meticulously covered the pristine drywall with reclaimed brick veneer, chipped plaster, tile, and Venetian plaster. A floating ceiling was dropped over the bar to create a more intimate space, with an upper layer of aged tin ceiling tiles applied to the existing drywall to create layers, showcasing our meticulous attention to detail. Jacob's vision extended beyond the aesthetic aspects. He aimed for the space to serve as a canvas for uncompromising hospitality and to have a high level of service functionality, setting a new standard for the Chantecler brand and creating a unique guest experience. This functional approach was meticulously applied to every area in the front and back of house spaces. We worked closely with the whole Chantecler team to plan and consider every detail extensively, ensuring a seamless and efficient operational reality that would become a backdrop for what their team does best. The resulting attention to detail is evident throughout the space, with a seamless blend of comfort and hospitality that must be experienced to be fully appreciated. We strongly suggest having the steak tartare or French onion soup... and of course the duck confit!
